Bates Technical College’s Culinary Arts Serves-up Competition Burger

There are restaurant burgers, and then there are burgers that compete for awards. On Tuesday, Jan. 27, from 11 a.m. to 12:30 p.m. in the café at 1101 S. Yakima Avenue in Tacoma, Bates Technical College’s Culinary Arts program will serve the burger that competed in November’s World Food Championships in Las Vegas.

The Snooty Chef Burger features a juicy combination of ground Kobe beef and rib eye steak, mixed with a Hungarian ragout blend spice from local gourmet seasoning company, Two Snooty Chefs. The burger is topped with crispy bacon, tempura-battered and fried Havarti cheese, a salad of arugula, tomato, and red onion tossed with a red wine vinaigrette, and caramelized onion mayonnaise. The masterpiece is assembled on a toasted Kaiser bun.

Two chef instructors, JJ Meland and Roger Knapp, along with student Tony Brooks, wowed the judges at the international competition, where they placed fourth out of 50 competitors. The first win advanced them to the final round, where they placed in the top 10. The team was invited to compete again in the 2015 competition in Florida.

“We’re excited to share this delicious burger we’ve worked hard to develop with our community,” said Meland. “The Bates team enjoyed the 2014 competition, and we are excited to develop a new, innovative burger to bring to next year’s World Food Championships.”
